Cheryl's Easy Strawberry Shortcake

I buy the angel food cake mix that only takes water. I think it's Pillsbury. Other mixes require egg whites, but that one is so simple, that's why I like it. Bake it according to the directions, but bake it in a 9 x 13 pan that you've sprayed with cooking spray.

While it's baking clean and slice 1 - 1 1/2 pints strawberries. (I've also used frozen with excellent results.) While the cake is cooling, prepare a large package of sugar-free strawberry jell-o. I use crushed ice (cause it's on the door of my fridge and easy) added to the cold water to speed setting up. It will still be liquid. Add the strawberries to it.

Use a large meat fork or a knife and poke holes all over the cake. Use the utensil to pull the sides away from the pan. Stab it up really well. The pour the strawberry and jell-o mixture around the sides first. then over the top. You may have to use a big spoon to distribute the liquid and fruit evenly.

Cover it and immediately refrigerate. It takes only a couple of hours to set up if you need it right away. I've made it at the last minute or the night before with perfect results.

Serve with Cool Whip.

  2. Cheryl I went to Debbie Macommbers book signing and it was not busy at first and then all the sudden it was like they opened the flood gate and everyone kept pouring in the door. It was nice to be able to meet her after reading almost all her books. She was going to knit with the people if they wanted to, I don't know how to knit so I couldn't do that she asked each of us if we did and I said I only knit while I am reading her books. LOL
    She is such a nice and funny lady it was a joy to meet her. Hope you were able to get there. Plus I did some p.r. for you told them all about your wonderful books.

  3. M: I missed you since I attended a writing conference by DM AND Alex Kava for 20 impressive high schoolers, some teachers & a few ladies that morning. Alex lives in Omaha and FL so we talked about seafood; met her last year at Plattsmouth Library signing; was worth hearing her again, amplified. Deb was very informative; they were a good contrast and a great pair.
    I too tooted your horn, Cheryl; enjoyed both very much, but you still have my heart, dear friend.
    Deb kindly signed 26 of my 75 books; even had one print she had never seen (anthology with Jayne Ann Krentz & Diana Palmer.)

  5. I suspected it might be busy, although a weekday is often a difficult time to draw a crowd. I'm glad there was good attendance. My hubby took a day off work so we could do yard work, so I was up to my eyebrows in dirt and--well, let's just say I was "glowing" in the heat.

  7. Mickey & Lou, I'm a Debbie Macomber fan too. I went to her signing in Spokane a couple of weeks ago. It was supposed to last 1 hour. I was about the 30th person in line and when I left the hour was almost up and there were still probably 200 people in line! She's a really nice lady. She had emailed me the week before to ask about a pattern I had. There were so many people waiting we couldn't talk very long. She goes through Spokane all the time to visit family in Colville so we meet at yarn shops sometimes to trade patterns. She is a great Christian lady and Very funny.

    Lou is right though Cheryl, my first loyalty is you, we've know each other a long, long time. Before my gray hair set in. :-)

    I drove to Portland this weekend to spend a girls weekend with Mandy. Just got home but we had a great time. Got our toes done and shopped. What could be better? Dennis is off to South Africa so I have a week to myself. What to do? I think I'll stain the deck!
