I love soup and soup recipes! Fall is the perfect time to use those fresh vegetables and cook up yummy soups. I've been chopping and freezing zuccinni and onions and green peppers for the winter. I made a yummy black bean soup this week. I'll post the recipe.
I'd love to have your favorite soup recipes too.
The only good thing about winter in Iowa is Soup Weather! My husband makes the absolute best chili around. Now I'll have to go to the store and get the ingredients. Nothing like a good bowl of soup!

ReplyDeleteWe're having Soup Weather here in Sindelfingen, Germany, this morning. It is cold as the dickens, and foggy as anything. My mother-in-law has a recipe we all have used for chili for years. I can send it/post it if you like. glenda

Oh, Glenda, please post it here so we can all enjoy it. I guess we could call it "German chili"?? I love to try different recipes.

1/2 lb pinto beans (I use canned)
5 cups canned tomatoes
1 lb gr. peppers (seeded and chopped)
1 1/2 Tbsp salad oil
1 1/2 lbs onions (peeled, chopped)
2 cloves garlic (peeled, crushed)
1/2 cup chopped parsley
1/2 cup butter
3 1/2 lbs either grounded beef or grounded beefchuck or grounded lean pork (I use the first mentioned)
1/3 cup chili powder
2 Tbsps salt
1 1/2 tsp pepper
1 1/2 tsp cumin seed

If using dry beans, soak overnight, change water and boil until tender.
Fry meat in a large soup pot in butter until well done, throw in´onions and green peppers, saute till onions are glassy, then add garlic and parsley, then all other seasonings, one after the other and mixing well.Add beans... Let simmer an hour or two....
This recipe doubles and triples just fine and tastes even better the next day. Freezes beautifully also....can also change and add ingredients....
