Black Chocolate Cake

Black Chocolate Cake

Prep Time: 40 min
Yield: 8 servings

2 cups sugar
2 cups sifted flour
1 cup cocoa
1 Tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2/3 cup olive oil
2 cups boiling water
2 eggs
1 cup fresh raspberries or strawberries, sliced
1 bowl Cool Whip, thawed

Mix dry ingredients. Add vanilla and oil. Slowly pour in boiling water and beat until well mixed.
Add eggs, one at a time, beating well after each addition.
Pour batter into cupcakes or rectangular glass dish.

Bake at 350 degrees for 30 minutes or until toothpick inserted comes out clean.
Cool on rack.
Serve with fresh berries and Cool Whip.

  2. RASPBERRIES (my FAV!) or strawberries AND chocolate, a KILLER combination of temptation! I'm with Mel, you are a devil (as in 's food? LOL pun intended)

  3. In teaching Life Skills to Special Educ High school students, we made Crazy Chocolate cake with vinegar & NO eggs- sounds gross but VERY good. Will try to copy & send recipe in next week or so.

  4. Anyone near Papillion, 132nd Blondo or 72nd Dodge, remember Borders 75% off sale on Lindt chocolates- I am SAVORING square by square of Dark choc w/ Intense Orange or Truffle Cake and milk choc w/ Lemon Tart cream filling and crunchy merigue pieces!
    Keep them in fridge; will buy more Wed to share w/ women's Bible study group Sun evening at my house-19 squares won't last FIVE whole DAYS! No restraint-I ate 6 tonight! ROFL
