My precious friend, Tina Gayle, brings us a recipe today. Tina is a writer friend, but more than that--she's one of those dear people who will always be in my heart, no matter how near or far. She lived in my city for years, but is back in California, and I miss her dearly.

I wanted to bring along a dish that we could enjoy. Being a southern girl, I always like to have food at any party.
So since I couldn’t provide everyone with a delectable dish, I thought I would share a recipe that will be included in the Heartland Writers Group cookbook coming out soon.
It’s called “Just Peachy Oatmeal”
It can be used for breakfast or for dessert – you choose.
1 29oz. can of sliced peaches
1/2 c. sugar or Splenda
1/4 c. flax seed meal
1 c. ground old fashion oatmeal – I grind this into a meal using a coffee grinder.
1 t. lemon juice
4 Tbsp melted butter or margarine
1 t. cinnamon
1/2 t. salt
Combine everything and pour into a greased round baking dish.
Bake in a 350 degree oven for 25 minutes.
I’m sure you can probably make this in the microwave, but I like it best out of the oven.
Serve with whipping cream or ice cream, or just by itself.
