Charlene Sands: Recipe and Amazon Gift Card Giveaway!


Cheryl was kind enough to invite me to her blog today and I wanted to share something sweet in return.   
Recently, I celebrated my 39th (so not!) birthday and my lovely daughter made me this wonderful flourless chocolate cake.  

This recipe is truly an Exquisite Acquisition.  

 It’s so easy-peasy to make, it’s almost foolproof.  Think of something between the moistest chocolate cake you’ve ever eaten and a gooey brownie…and there you have it.

We topped ours with fresh fruit and a dusting of powdered sugar, (you can use cocoa also) but you can eat it as is…it’s that moist. 

           

            FLOURLESS CHOCOLATE CAKE 

4      ounces fine-quality bittersweet chocolate (not unsweetened)
1 stick (1/2 cup) unsalted butter
3/4 cup sugar
3 large eggs
1/2 cup unsweetened cocoa powder plus additional for sprinkling


Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and butter paper. 

Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. 

Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate. 

Dust cake with additional cocoa powder and serve with sorbet if desired. (Cake keeps, after being cooled completely, in an airtight container, 1 week.)

  8. Hi Mary - The cake is also called "cracked cake" because it takes on the look of a brownie. So dont' be alarmed if there's a few cracks in it. It's pretty with a sprinkling of powdered sugar or cocoa powder. And put the fruit (if desired) on last, or it will make the cake soggy.
    I hear you about the dieting...me too!

  9. I would love to try a flourless Chocolate cake as my husband loves Chcocolat. Perhaps once it gets a bit cooler and I and handle turning on the oven and heating up the house. Perhaps for our anniversary in late fall.

  25. I have a confession to make: I make a chocolate cake at least every other week. Chocolate cake is my thing. Totally. My favorites are Texas sheet cake and black forest cherry. So you know I will try this and probably add cherries to the top.
