Barbara Monajem's Recipe for Beet Slaw and a Drawing


I love getting the gift of a new recipe, don't you? Barbara Monajem shares her beet slaw recipe with us today, and I am excited to try this out. I've never tried raw beets, that I know of. Her slaw sounds delicious.


Beet Slaw

When I was a child, beets were a vegetable you always ate cooked. Not any more – now my favorite way to eat beets is raw in this slaw. It’s colorful, nutritious, easy to make, and a perfect summer salad.

All amounts are approximate. This recipe serves about 6 people as a salad to accompany your meal.





Ingredients:
One half of a large green cabbage, finely chopped, or more if you like a lot of cabbage
3 to 6 carrots (depending on size and how much you like carrots), peeled and grated
1 raw beet, peeled and grated (size depends on how much beet you want in the salad, so if you’re unsure, start small)
3 or 4 spring onions, chopped fine
a sprig of chopped parsley

Mix the above ingredients in a bowl.
For the dressing, mix the following in a jar:
Juice of one lemon
Equivalent volume of wine vinegar
Olive oil, equivalent in volume to the lemon juice + vinegar combined
Dried oregano, salt and pepper to taste
Put the cap on the jar, shake well, pour it over the salad, and mix well.
If possible, let it sit and soak up the dressing for a while before serving.
 (It’s even tastier the next day.)
